Green was chosen for reproduction. Early copying processes were insensitive to it, so a green grid would largely drop out of a copy while the pencil work stayed — you got a clean drawing without erasing anything.
Modern scanners see green perfectly well, but the choice survives because it works visually too. Green is distinct from graphite and from blue ink, so the grid never competes with the drawing.
