Landscape gives a spreadsheet room to be wide. Ten columns across a Letter sheet on its side are each about 26 mm, enough for a date, a name or a figure, and the rows are about 7 mm tall — close to college ruled, so handwriting sits naturally in them.
Up to 15 columns and 60 rows fit on one sheet, and a wider first column makes room for item names or dates. For money columns with a cents rule, accounting ledger paper does the same job with its own layout.

Up to 15. At that count each column is about 17 mm wide, so switch to Legal or Tabloid if you need more room in each cell.
Set First column width to about 10 mm for a narrow column to write row numbers in, the way a spreadsheet program shows them.
